(Poul Kreyòl Bouyi | Sòs Pwa Rouj) The centerpiece of these signature plates is traditional Haitian chicken on the bone, slow-simmered in a rich, golden bouillon reduction infused with aromatic herbs. Each plate is balanced by a trio of caramelized fried sweet plantains, a crisp garden salad for contrast, and garnished with our sharp, house-made hot pepper cabbage pikliz, paired with twin dome Jasmine white rice and savory red bean coulis enriched with whole, tender beans.
